Top Chefs, Winemakers, Social Media Pros & Coffee/Tea Experts

I’m entering a very fortunate month in February, full of deep networking and village building. I’ll be enjoying dialogues and events with some of the world’s best Chefs, Winemakers, Lawyers, Online Marketers, Social Media Professionals and Coffee/Tea Experts.

Foodportunity Seattle :: Monday January 31

On Monday, I travel to Seattle to escort the founder of PromoBomb and Beer2Buds for a night of networking at Foodportunity SEA.

Foodportunity is a networking event for food journalists, public relation professionals, restaurateurs, farmers, companies and all food passionate people. Held twice yearly in both Seattle and Portland, the event brings over 300 people out to nibble and network for the night.

Foodportunity PDX is a Chalkboarder client.

Stoel Rives LLP Wine Law Summit :: Thursday February 3

On Thursday, I head out to the Allison Inn in Newberg Oregon to speak on social media to 70+ top Oregon wineries. My presentation is during lunch at Stoel Rives law firm’s 4th Annual Wine Law Summit.

Then it’s off to the icy streets of New York City!

The Whole Hog Dinner – James Beard House, NYC :: Friday February 4

After landing around 6 am, I head over to the James Beard House for the day and night, assisting the Chefs from The Berkshire Farm & Table “Association” with live social media (what we at Chalkboarder call Social Media On Demand) as they prepare a fantastic dinner – The Whole Berkshire Hog – for 140 diners. Of course, that’s followed by a little bourbon.

NYC Street Food :: Saturday February 5

Saturday’s adventure is trying to find food trucks.. good food trucks.. in winter in New York City. This little project is benefiting Chalkboarder’s Atlanta client Urban Toile, who’s weeks away from launching what will be ATL’s hottest food truck.

La Vida Cocoa & World Chocolate Expert Clay Gordon :: Sunday February 6

I first met Clay Gordon, one of the world’s leading experts on cocoa and chocolate, at the World Pastry Chef Team competition in Phoenix Arizona last summer. Clay and I captured a lot of material for social media for Dessert Professional magazine, while pushing four Discovery Network camera teams out of the way. Clay is one of the world’s most interesting men, traveling to remote locations (literally over some of the most hazardous roads in the world) to research cocoa and maintains a great blog called La Vida Cocoa. We’ll be visiting The Meadow in West Village.

From winter’s freeze to sunny Southern California!

Online Marketing Summit/Social Media Masters :: Wed-Fri February 9-11

After three dats of remembering why I left icy roads and snow drifts, I’ll find myself in San Diego, attending the Online Marketing Summit for two days, followed by the next day of assisting Carri Bugbee in her six hour workshop on Using Twitter for Business. I get an hour to talk about using #Chats on Twitter for brand development.

It will be quite fun to see Brian Solis again; he’s already told me he doesn’t do bourbon – maybe he likes Chile Rellenoes?

Coffee Fest Chicago :: Fri-Sat February 18-20

The following week, I head to Chicago for the leading specialty coffee and tea trade show. I hired Scene Marketing Group‘s Shannon Pratuch and Laura Hedges – both top social media professionals – to come with me to provide Coffee Fest with extensive Social Media On Demand. I’m also excited to sponsor Johnbruce Haslett, of Pacific Grind Cafe in Lincoln City Oregon in the Latte Art Competition.

All said, it will be nice to get home after Coffee Fest, if only for a few days before heading off to meet Paul Barron (Digital Coco, Fast Casual) at the NY Restaurant Show….

Denver Restaurants Lead The USA In Using Social Media To Connect With Customers

Over the past two weeks, Chalkboarder.com conducted a study of social media use by restaurants in fourteen major metropolitan areas in the United States. We found some interesting results.

Denver uses more social media to connect with customers than any other metropolitan area in our study. At the bottom of our list we’ve got Philadelphia using the least Twitter, while Miami uses the least social media overall.

We’ve generated some hypotheses around our data, but first wish to continue breaking this out. Here are the results:

The purpose of this study was to gain a rough assessment of the ease a customer can have to connect with a restaurant through the virtual door of the internet and social media.

To be blunt – there’s a lot of poor website design in the restaurant industry. We’ll cover that topic in a later article. A humorous result of conducting this study is how hungry we became each day after looking at so much food.

Let’s look at the table. Chalkboarder.com studied 2175 individual restaurant listings on Urban Spoon over the past two weeks. We chose to look at the “Affordable Fine Dining” segment, representing meals in value averaging $15-25 for dinner. We chose to only look at the first 30% of the total listings in this category (user-rated) for the fourteen cities (7315 in number).

Further discovery and extrapolation gives us another surprise – only 33% had a direct email link. We do admit that we factored a bias in this particular data point – the belief that a customer will feel greater ease in connecting to a business when seeing a direct email link, not a comment form.

Now the interesting details on social media. Our study indicates that only 10% of restaurants have embraced social media (Facebook, Twitter and other networks) as a means to connect with customers.

Having said that – the only means that we used to try to discover if a restaurant was using social media was through searching their websites for a link. It is very possible that this percentage is a bit higher – it could be that they have not updated their websites to show that link.

One further note – around 2/3 of the restaurant Twitter accounts we visited had just begun, with follower counts less than fifty.

There’s a lot of dialogue in the industry right now about using social media. It was the dominant topic at the National Restaurant Show in Chicago in May. It dominates the first day of the Oregon Restaurant Association’s annual conference next week. Operators are struggling to understand the media and what best-practice is.

Some observations from our research into effective social media use by restaurants:

  • Be authentic.
  • Don’t advertise. Rather – engage and communicate directly.
  • When you begin – just listen for a while.
  • Share the inner workings of your restaurant (more in the next paragraph on that)
  • Accept criticism from social media positively – it is people wanting you to be better at what you do.
  • Tell stories of your restaurants life and of you.

Chalkboarder.com follows over 300 restaurants nationally on Facebook and just over 200 on Twitter. We’ve seen some great and outstanding examples of effective social media use. We’ve also seen some examples that “fail” (for example: only sharing your logo on your Facebook messages – no text or pics – just your logo).

There are several industry leaders who have been studying best social media practices for the hospitality industry. We certainly have our favorites that we pay attention too, such as Paul Barron of Fast Casual Magazine and Michael Atkinson of FohBoh.

There’s a huge opportunity to cement deep community with your customers through social media. There’s an opportunity to boldly go where others haven’t, yet. Using social media to build your sustainable customer base will be standard best practice in a very short time.

Disaster Culinary Management Teams

This is an alert seeking Chef Volunteers willing to work in field kitchens in Haiti.

Over the past 72 hours I’ve been networking with:

U.N. World Food Programme
American Culinary Federation
FohBoh (Michael Atkinson, CEO)
Share Our Strength (Billy Shore, Deb Shore and Ashley Graham)
People Report (Joni Doolin, CEO)
Fast Casual (Paul Barron, CEO)
U.S. Department of Defense (Col. David Lapan, USMC, Chief Public Affairs Officer)
U.S. Army Quartermaster Corps (Lt. Col. Samuel Russell, QM, Chief of Commanding Generals Office)
Sodexo (USA and China)

I’ve had direct conversations with the above entities. Some of these conversations have led to this call being shared with the Executive Board of the National Restaurant Association, McDonalds Corporate Office, Chefs for Humanity and the U.S. White House Office of the First Lady.

The next two to three weeks in Haiti will see prepackaged ready-to-eat meals being distributed. Then, transition will occur to actual food preparation in the field. The field will be extremely challenging.

Specifics have not been solidified at this time – but I encourage anyone interested in volunteering to leave a comment here to this blogpost.

The chefs and restaurateurs of the USA, particularly those affected by Hurricane Katrina, offer vast management experience in efficiently feeding large numbers of people. We’ve demonstrated this ability to hit the ground running, quickly take collaborative command of culinary management (in partnership with various government and NGO organizations) and lend our significant skill and financial resources in a large scale humanitarian response.

The combined networks of the National Restaurant Association (including its partner state hospitality organizations), the American Culinary Federation, Share Our Strength, and other entities such as FohBoh.com (largest social network for the industry), Nation’s Restaurant News and Fast Casual – represent the ability to quickly notify and mobilize volunteers and donors.

Haiti

The sheer scale of the earthquake disaster in Haiti will require mass-feeding on a scale similar to the needs facing the victims of Hurricane Katrina. I believe there are numerous talented professionals that would be willing to respond to an organized response in the field.

I also believe there are logisticians who can quickly coordinate such an effort, facilitating organization, placement and distribution of Disaster Culinary Teams in Haiti.

Much as SAR Disaster teams are fielded, the restaurant industry in the US has the ability to provide critically needed knowledge and practical experience, in addition to the financial generosity this industry is particularly known for.

You Just Never Know

You just never know. You just never know where this social web/social media adventure will take you.

As I launched Chalkboarder in the summer of 2009, I became aware of a social media evangelist with deep restaurant experience. I think I first became aware of Paul Barron by seeing his name as a presenter on social media and the restaurant industry as a speaker at both the Western Foodservice Show and the annual conference of the Oregon Restaurant Association. I began reading his blogposts and learning his take on the social web as applied to the restaurant industry.

That August, I was fortunate to participate in the Northwest Sustainability Discovery Tour – exploring how food companies and restaurant operators were incorporating sustainability into their operations in the Pacific Northwest. It was at this conference that I met Paul. I think we exchanged a total of ten words the first day.

The second day we sat at the same table in the morning. I remember writing a little note about the speaker’s content on a blank business card and sliding it to Paul. He read it and later asked me if I always carried blank cards, which I did. He suggested I print at least the web address or my email on the blanks – as a way to incorporate my brand into a useful tool.

We traded a few emails back and forth over the next month and then I got a surprise email from him, asking if I would be willing to replace him as a speaker on social media at Coffee Fest Seattle. I felt pretty humbled and honored that he would think of me and immediately accepted. The folks at Coffee Fest have told me that my presentation was considered one of the best by their attendees.

Paul and I have built the beginnings of what I hope will be a great friendship. My respect for his thinking and vision is immense and grows with every communication.

Here is why I’ve written this post – you never know where the social media adventure and journey will take you. As a result of getting to know Paul, I have added a major client to our Chalkboarder roster with Coffee Fest. A year long social media strategy and execution with Coffee Fest as a client, with a deeply well-regarded brand image, will lead to other clients in the specialty coffee and tea industry. The ability to share Paul Barron and Coffee Fest as referrals to prospective clients of any industry is of huge value to us.

Paul, meeting, listening to and knowing you – created one of the early legs of Chalkboarder’s client base. I owe you much for entering dialogue with me and being willing to share so much. Thank you for being a mentor, sir.

The Agony and Pain of Restaurant Websites

Smooth Jazz? Flash? Impossible Navigation? Incredibly Long Loading Times?

The current state of restaurant websites is pathetic. Haven’t we had enough of this? Why do restaurants think they can get away with putting up a brochure of their offerings and expect their customers will respond by flocking to their establishment? In a city like New York, with thousands of dining options, it is simply not enough to broadcast your service to a sophisticated public. Even in smaller cities and towns with far fewer options, restaurants are failing miserably to adapt to the realities of how consumers spend their money today.
Let’s Take a Look at Why

The 20th Century is why! All one had to do was broadcast, hire some P.R. people, get the word out and hoped and prayed that the customers started flocking.

Not anymore folks! American’s get a bad rap for being lazy, apathetic gluttons who watch too much TV and lack any real culture. Silly I say! Social Media is changing that perception right quick! And more importantly, it’s changing the truth about Americans.

American consumers are quickly becoming a discerning sophisticated consumer. Part of this is due to the recession. We are all going through a phase of re-prioritizing just what it is we REALLY want to spend our money on. And what we want to spend our money on is places, products and people we believe in, that we feel connected to, that we feel we have a stake in.

Social Media makes this all possible. We can now communicate directly with the brands and businesses that get, or could potentially get, our spending money. And it’s all public. No more ruses, no more telephone hangups, no more poor customer service. Why not? Cause when you piss off a customer these days, they can get you back. They can Twitter it, they can post a youtube video, they can blog about it.
What Do Restaurants Need To Excel in Social Media?

First thing’s first, you need a blog. There are so many stories to tell. Who are they? WHY are they? What motivates the chef, the servers? Give me a narrative damnit. I want your food but I also want your story. Restaurants are one of the few remaining places that we go to truly disconnect. To be with our loved ones, our friends, our family. We get to connect in real life after SO much connecting online.

But I want to do so in a place that has captured me with their story. And you can’t do that without a blog. Start one, make the time to learn the basics and start sharing. You will quickly find a lot of people willing to share your story. You’ll find your natural constituency. Are you a Nouvelle Mexican spot in Boerum Hill? Well, talk Mexican food. Share stories about authentic Mexican ingredients. For the Chef: Write a post about any stage work you did in Mexico or Spain or wherever! Who trained you? What did you learn?

Where does your food come from? Talk about your vendors, the farms and middlemen that get the product you serve? Talk about the menu, how was it created? What inspired this dish or that? Give us some context. You don’t have to give away every little secret. We still like to be surprised. But give us something!

Oh, and can we please get your social media links? Every website in the world has their social media links proudly displayed on their website. And you don’t? I know 14 year old Indonesian scam artists who have better designed websites than you do. Oh and btw: you got ripped off royally on your site.

And tell us who is doing the twittering? Is it a host? What’s her name? The Chef? The PR Firm? Let’s get some transparency people.

How Can You Use a Blog To Entice Customers?

As I am known to do, I asked Twitter AKA The Hive Mind about this today. One user, a new friend name John True suggested letting blog readers know about special “off the menu” items. This is a fantastic idea. Every so often the restaurant could end a blog post with an “Easter Egg.” Basically, they could leave a clue telling readers (or twitter followers) about something special going on. This a great way to make your readers feel their are privy to something special. And it’s another creative way to convert readers to customers.

What about letting blog readers, or Facebook Fans, or Twitter followers get first dibs on any special events? And what about video? And Pictures?

Start a YouTube channel, get a Flip HD camera and start interviewing regular customers. Is someone coming by once a week? Get him or her on tape to tell us why? What draws that customer back? Maybe we’ll feel the same way. Are testimonials so hard to produce? Stop relying on a big media dinosaur to come to your rescue. Yes, The New York Times is still important, and hopefully always will be, but for the most part, the impact of professional critics is nominal. If 20 food bloggers love you, and 5 critics don’t, guess who wins? It ain’t the critics. No one trusts them anyway.
